Generally 2 people on board, shower and washing up. Should I go for a 15 or 22l size?

Agreed. The largest you can easily fit.
Ours is 40 liter which is plenty for all uses. Becomes very hot by engine coolant or shore power, keeps temp nicely from day to day.

Once you have hot water on board, you will be surprised at how much you use. I found just washing dishes, before I had to boil a kettle, now I use more water as I fill the bowl. Fit the largest calorifier, you will not regret it.

And a thermostatic mixer valve makes the hot water go a bit further.

I mitigated the thermostatic costs and maintenance by fitting a simpler, shunt(ish) type single faucet

Rather depends on how long your crew takes in shower but 15 certainly too small to my mind .

And also ask what are the dimensions OVER the insulation as sizes given tend to be the cylinder size. I had to cut a 'vee' shape from my new calorifier so I could get it through the hatch opening. Glued it back on after final fitting.

Our's is 20L and is just right for the two of us. I recommend adding 50mm of insulation on the outside.

You are obviously far too young to have granddaughters for whom hot showers are a birthright. My worst nightmare is when they arrive as a covey of 6 - but is the reason we have a gas boiler and de sal unit

Having previously had a couple of 40l tanks current boat is 25l and too small really. Not only do you get less hot water to start with but it cools down noticably quicker.

In the caravan its 10 litres heated to 80deg and we manage as it needs a lot of cold water adding to be safe.
On the boat its 75 litres heated to 80deg by the engine and there is more hot water than we need.
In the house its 300 litres heated by the sun to 60deg and we can have many baths
