Like for example how many nm`s it has traveled during the last month? The last year and so on.
Is there a AIS tracking tool that can give me stats on my boats movement?

That's a Log. A Chart Plotter has a resettable log function, mine has about 8. You could zero them and then reset one monthly, one yearly etc.
That would also give you plots of your meanderings.

That is normally done in a log book or as a download from a chart plotter.
For lots of beer tokens you could pay Marine Traffic to see all the data that they collect when you are within range of one of their ground stations.

If your boat has an NMEA2000 network then one of these works well: Voyage recorder for cruising, racing and charter boats . You can download your full season and turn it into an MPX file for uploading to Google Earth, or turn it into a CSV file and upload it to Excel. It records all NMEA2000 traffic, even passing vessels' AIS tracks.
