we are going to install a new 1000 watt electric windlass on the boat,what size cable do we need on a 30ft run.

Off hand I'm going to guess that you will probably need 2/0 or 4/0. Your run isn't 30'.....its 60', unless your batteries are located 15' from your windlass. You have to consider the run out and back to the batteries in your computation for your wiring. Length vs amps. Since I don't know if your boat is 12, 24, or 36 VDC I can't really tell you what size cable you need. And if you're on the other side of the pond, I'm not sure that 2/0 or 4/0 means a whole lot.

Assuming your voltage supply is 12v

Assuming your windlass is 9m from your batteries.

You'll need about 28mm2 - ie what is used on cars for battery to starter motor.

Siemens do a table showing the various sizes of cables needed for differents dc voltages over various distances.

You'll find you're pretty close to the maximum run for that amount of 12v current - I'd suggest fitting a thermal interrupt in the run.
