To aid seperation of water/hull? Cleaner seperation might prevent spray being formed that would be pulled into the bridge by the air vortex?

Total guess, I know nothing about mobo's, but it looks like the spoiler fitted to shelby cobra coupes

Some boats have what look like fixed trim tab plates bolted to the hull. The purpose of those is to extend the effective underwater hull length and trim the bow down a bit for better running. The boat in the picture has Humphree Interceptor trim blades. They lower down vertically into the water and again cause the bow to trim down depending upon their depth into the water. Those stainless steel plates look like the modern equivalent of fixed tabs and are set to keep the boat trimmed at speed under normal ish loads/speeds.

They don't have the horizontal plates as seen on the be nett type of tabs just vertical plate probably projecting 1 inch below hull
It looks like a big heavy boat

They are fixed interceptors and work just like the Humphrees. They are installed i the propellor stream for more effect and most likely to cure a "bow to high"issue.
Many boats used to have hull extenders which was a like a fixed trim tab inwards of the trim tabs tabs. This is the exact same thing but interceptors instead of tabs. Just like the Humphrees beside them.

Interceptors are said to have less drag vs the lift they produce compared to traditional trim tabs.

In my experience big tabs are better at lower speeds while interceptors are more efficient at higher speeds. So to put a fixed interceptor in the propeller stream makes sense.

I know of several older sunsekker predators with deep tunnels that was prone to run bow high that got fitted fixed curves tunnel interceptors. Made a lot of difference.
