To extend the pedantry, , in the US they have freshwater bass hence the distinction. Most "sea bass" and bream in restaurants in the UK and Europe are from fish farms, often from the Med - but not always. You can normally tell as they are such a uniformed size no matter where you are eating.Sorry to be pedantic, but there is no such thing as a sea bass. It's just a bass. Unless it's a rock bass or a wide mouthed bass or a striped bass. If it's from UK waters it's just a bass!
