Just idly looking at Peterson's website and noticed two type of wire/fittings, for 1x19 and 7-strand wire - pros and cons?

Rigging wire

I presume you mean 1X19 and 7X19.
1X19 is the usual SS wire used for rigging of shrouds etc.
7X19 has 7 thin strands there then are 19 lots of these groups. So 7X19 is flexible and can be used for halyards ie where it runs over pulleys. It is usually more expensive. good luck olewill

1 x 19 is stronger for a given diameter, but isn't as flexible as 7 x 7 or 7 x 19.

For example, 6mm 1 x 19 has a breaking load of 2,880kg; 7 x 7 is 2,180kg and 7 x 19 is 2,040kg.

1 x 19 can't be used as running rigging; running rigging and steering cable is 7 x 7 or 7 x 19. The flexibility of 7 x 7 and 7 x 19 permits the use of thimbles whereas 1 x 19 needs swages or compression fittings.

Excellent! One can always rely on the forum to educate the ignorant - well a lot of the time, anyway :)

Haven't got the boat up yet, but I'm already starting to worry about replacing standing rigging!

Wire halyards are a thing of the past, correct 7 x 19 can be used but lots of people have changed from wire to Dyneema, English Braids do a cruising Dyneema which is cheaper!
The biggest cost when replacing standing rigging is the rigging screws, I tend to use Sta Lok which are not cheap but very good quality. You can also do the rigging yourself by fitting self fit terminals, again Sta Lok or Norseman can supply.
If you are thinking of replacing your rigging its worth costing with and without the rigging screws, you will be shocked by the difference in price.
