I too have a Whitock chain & cable pedestal and have been unable to find information on the Lewmar web site.
This is a link to info on the Cobra which I think has the same friction device as ours.

I have now found information on the cable and chain steering pedestal.
It is a pdf file and too large to attach to the post.
