more info on the boat size and type would help...
But I can suggest you kill the engine, lock the tiller in the middle (experiment with this position!) and ease the sheet right off. As you pull up the sail as long as the boat is upwind of beam on it does not matter as the main will feather into the wind. If you leave the sheet cleated you will never do it!

You could always run the halyard aft, but probably not needed..

The ways I do it are

1) Use a tillerpilot to motor into wind - OK, not too helpful a suggestion if you don't have one ... but these are an enormous help if single handed making getting fenders out etc much less of a problem as well as dealing with sail hoists, reefs etc.

or

2) Pick up a mooring temporarily - OK well I keep the boat on a mooring so I normally just hoist the main before departure unless I am staying in a marina.

Probably useless suggestions but thats what I've done before.

Try setting the genoa first and then sheeting it home to backwind the main, with the mainsheet fairly loose. If you have an autopilot you should be able to sail upwind on your genoa, if not experiment fo a helm setting to keep her going more or less in the right direction.

PS Remember to have a look round from time to time to make sure you do not hit anything.

Best of luck

Somewhere I saw a neat invention.. drain pipe over the end of the tiller attached to the end of the boom by lines.. hence by keeping the boom central you also keep the tiller central too.. If you head into wind and try this it might help.. on the other hand it might make the mainsail hard to hoist if it catches the wind ..

Are you letting the mainsheet fully go? If not you'll be fighting it and it will take you around very quickly.

Where about in the Moray Firth are you??

I'm in roughly the same area, so if you are looking for someone to go with you and try a few things out with at any time, or even just to bounce a few ideas off, send me a PM. 2 heads are better than one - or so they say !
