How many Gas bottles ???

Not if you have a couple of peices of wood under the bottle, this is exactly where our gas bottles live, in a small locker at the aft end of the cockpit.
 
Not forgetting the Westerlys fitted with the 'swinging bomb' gas canister directly under the hob! How was that ever accepted by insurers I wonder? /forums/images/graemlins/confused.gif

I've encountered this arrangement as a proper design arrangement on several boats, all Swedish built IIRC.

One tip: make sure the bottle is properly strapped down so it won't fall over when you have to beat into a heavy chop.

Not if your cockpit drains are below waterline !
Water will run out, gas won't

Not so uncommon as you think ... camping type gas stoves with integral canisters were used on many pocket cruisers in the past.
