Not if you have a couple of peices of wood under the bottle, this is exactly where our gas bottles live, in a small locker at the aft end of the cockpit.

I've encountered this arrangement as a proper design arrangement on several boats, all Swedish built IIRC.

One tip: make sure the bottle is properly strapped down so it won't fall over when you have to beat into a heavy chop.

Not if your cockpit drains are below waterline !
Water will run out, gas won't

Not so uncommon as you think ... camping type gas stoves with integral canisters were used on many pocket cruisers in the past.
