What to use on the needle bearings?
Grease or Oil?
If grease, Ramonol white Lithium grease, lighter spray grease or what . . . . ?
If oil, light three in one, engine oil or what . . . . ?

Grease, always grease. If there is no oil pump or significant splashing then bearings would run dry very quickly with oil.
Maxwell Winches (also Nilsson) of Newzealand recommend Castrol TC grease SP 1442.

From the manual for my Lewmar windlass...

"Assemble in reverse order. Clean and lightly grease components. When reassembling
the drive cap and gypsy, add a small smear of grease to the contact surfaces."

Nothing about which grease, though.

There are some great You Tube vids on servicing anchor winches - especially Lofrans.

Nothing in an anchor windlass runs particularly fast, or under particular pressure, so any sort of light grease will do. You are to be congratulated on actually wanting to service it, I doubt that many people do.

I slap white marine grease all over my windlass moving parts when I service it. It seems to like it.

I used a white teflon grease when I rebuilt a Lewmar horizon 1500 on our Sun Legende way back. I have not stripped our current Maxwell yet but would consider the same again.
