Not just food and drink, but any recommendations about what to do and see around Colchester after we have talked to the sailmaker.

Down for a couple of days and would hate to miss some "mustsee".
 
To be honest, the centre of town is a bit dull, as rebuilding post-war has not been well-done, and the shops are nothing special. I agree about the castle & museums - the clock museum is worth seeing and free. If you don't know the area, you could visit Brightlingsea by car/bus, or Wivenhoe by train/car/bus and get a feel for the coast by walking along the river. Best at low tide with binoculars.

It's looking a bit more promising. Maldon isn't far apparently and there are the Thames barges there.

Marinestore chandlers as well, so should be able to fill a couple of days.
