This is a site about a person who builds his own boat from a kit but with modifications. It's a mobo but there are lots of useful tips in the 35+ pages.

Take a look at the cuddy with the two comfortable swivelling seats. Why can sailing cruisers not have a similar comfortable approach? Who enjoys getting wet and cold and sitting for hours on end on a solid surface?

If you read Charlie Stocks book Sailing Just For Fun you will read how he measured his favourite armchair and altered his helming position to suit.
Theoretically there is no reason why not but few seem to bother.
