I am wiring in a 240v immesion heater, Ctek M300 and a spur of plugs from a small consumer unit.
What wiring diameter is best for the immersion and plug spur please?

2.5mm heat resistant to the immersion element if its a 3kw immersion, if it's anything less then still use 2.5mm incase anyone ever sticks a big one in there.

1.5mm is fine for the charger from its own breaker (6 amp) or a fused spur.

Radial mains sockets are 2.5mm fed from a 16 amp breaker. Technically you could use 1.5mm but professional installs run with 2.5mm.

For the sake of absolute clarity; since the OP asked for diameter of wire; the answers from Matthew referred to cross sectional area. Hate to see you struggling with massively oversized cable!!
