merciClac clac clac is something of a catchphrase of Le Cam's. It's what he calls his video camera, and indeed his videos.
French people often say clac or tac when they press buttons on a screen, or they're working their way through a process. I think in le Cam's case it was his struggles with his camera on a previous Vendée Globe, pressing the buttons "Clac, clac, clac" , which went down a storm with the viewing public, such that his videos tend to be called a clac clac clac, and he so named his camera too.
As to his speech, Le Cam can be quite slangy in what he says, so I can see that he would be hard for a non fluent French speaker to understand;

Yes. It's also considered to be the current weak point of the boat. It was specified for the static righting moment of the pre foilers, so the max cant keel + water ballast. RM derived from the foils massively exceeds this so skippers have to be very careful. His boat was built for the 2008/9 Vendee and the OD mast was introduced in 2013, so I'd assume that he has a non OD mast. He may have taken the decision to re-rig with an OD though, I don't know.
