When they were new there were lots of questions about how long the foam filling would last. That might still be a relevant question. Single skin equals much better value, more room and more future proof.
Very few Sadlers have problems with the foam. Mine is almost 30 years old and all foam I have been able to inspect is in perfect condition. I have read of owners who have water between the skins but I suspect this is due to adding fittings without isolating them from the foam, or maybe use of the shower (a disaster on these boats). There are disadvantages to double skin, internal space in particular, but the advantages pretty much outweigh them - complete absence of condensation, plus quietness and insulation.
