Apart from the cost, is there any downside to using stainless steel chain for a kedge?

No, none atall. If you can afford it, why not.

oh yes, and um, there might possibly be the issues for the ecology of the seabed with the very shiny metal blinding all the poor little creatures. Are there any other problem we can think up so he dumps the nice s/s chain in the skip and we can nip ovr and retrieve it?....
