Having spent the last 3yrs skiing at UK half term, I can safely say I will never do it again. Why not leave it until end of term (3rd/4th week March?) when its likely to be sunnier and less crowded. Also, with all this global warming caused by you blatting down the autoroutes at unfeasable speeds in your Merc, the season's seem to be getting later and March seems to offer better snow conditions now than mid Feb
As for booking in advance, whilst this may be a bit of an adventure for a couple, do you really want to drive all night, pitch up in a ski resort and spend all day traipsing around tourist offices searching for the last accomodation which is only available because its the crappiest and 3km walk from the nearest lift whilst your kids are mutinying and SWMBO vows she'll never speak to you again and thats before you have your first row on the piste because you forgot her sunglasses/suncream/hat/googles/liftpass/ski poles(delete as applicable). Been there and got the T shirt
BTW, apparently there are on average 300 people killed a year in the Alps pursuing alpine sports so your strategy of following the blood wagon might work
