We have gas for the hob, oven and hot water, gas locker is outside in one of the seats in the cockpit with overboard drainage, it was built to take two small gas bottles and had one half full one when we bought the boat in Sept. 2024, so far we have not finished that gas cylinder even though we have spent more than 100hours sailing last year and many weeks onboard, even to cooking for 6 people. The hob and oven are fairly new, the water heater is of indeterminate age and I want to replace that. Most of the boat is 24V with some instrumentation at 12V, a Victron 2000kVA inverter/charger on the house batteries takes care of the 230V electrics when away from shore power and is charged by the starboard engine, port engine charges the start batteries (24V) there is enough stored electricity for overnight use, lights, coffee maker, etc. but not much more, so we are going to add solar panels to the saloon roof before next season.
Heating is by diesel webasto warm air to the forward cabin, saloon, and aft cabin.

Over all we find the gas very economical to use.

Fit something like a Victron Argofet to the port engine and it too will charge the domestic batteries.

500-600€ for the induction , if you are about proficient , the installation and wiring is a DIY job i guess .

I have all electric + microwave and its absolutely great but gas is also great so i would never remove it when not having a generator .

You will find a situation looking at the guy who brews fresh coffee for his wife on his 20footer while you sit without coffee on your 40 footer waiting for the next lockage.
 
I have gone electric, but to cover out of marina cooking etc I have one of these:
FOSSiBOT F2400 Portable Power Station | 2,400W 2,048Wh

It will run a two ring lower power (camping) induction hob and/or an airfryer type oven. Obviously depending on how much cooking you plan to do when away from the marina limits it's usefulness. However it can be recharged from a cigarette lighter socket AKA the boat batteries and alternators as you motor along. It also means you have 240v ac for TVs, laptops, proper hairdryers etc.
