I have given up making grand plans, with up to 8 weeks available, you should be able to go where the wind blows best.
Maybe set a general target; Brest/Labewrach or Scilly/Fal after 4 weeks then, like the Magi, return by a different route.

You could miss out every "unmissable place" and still see a lot of places that should not be missed, so I would not worry.
The places on my priority list might be;
On the UK side: Fowey, Yealm, Fal, Dart, Salcombe.
On the French side: Morlaix Bay, Treguier/Lezardrieux, St Malo Bay, Channel Isles.

No set plans but would like suggestions that an East Coaster should visit if time / weather permit

I would go with wotever the combined crews interests are, festivals, beer, freshly landed fish or preschoolholiday cultural visits, marinas(?) or anchorages, def don't waste any wind with an east component, got a leccy anchor winch and a decent o/board/dinghy?
Just go dahn one side of the Channel and back along the other. Those Belgenese beers are available everywhere sans red diesel bolshy attitude, so West is smart imo.
If you get to Scilly and a nice n'easter pops up,, be a shame not to go Irish fiddly diddly music n oysters, but a long haul two up from Ireland across to Brest. Decisions decisions, eh.
IME weather will sort out the options lol

As they say, go where the wind takes you. A crossing from Dartmouth/Salcombe is quite easy too. Another alternative might be Southern Ireland which is lovely and not so many Brits.

You haven't said how far west you have already explored or what ratio of sailing to tied up you enjoy.
Last summer, for a change I went (for me east) to Honflur and Rouen which I thoroughly enjoyed and would highly recommend. From there you could then go on to St Vaast, CI's, St Malo, Dinan, Paimpol and as far west as you have time for.

We went from Brighton to Fecamp, a pretty easy cossing as you can skirt around the seperation scheme.
The trouble with going East to West on the French side is that you will always be fighting the tide and time to get over a sill into the next place.
Over the year we have stayed at so many places in Normandy/ Brittany we lost count.
Blogs from each place describing it can be found on our website below with lots of photos.
We found that the best place in France was the Morbihan and Vannes. Not to be missed on any account for the sheer thrill of sailing and then a truley stunning city. You may never want to come back.
A full account is on our blog including some photos.

Alderney, Carteret, Ile Chausey, St. Servan.

Diellette has a fantastic restaurant near the marina.

I'd go french and for an East coaster, go to ile de Batz and ile de brehat as well as to plateau des minquiers and see where real men dry out!

If drying out is an option try Brignogan Plages about 15 miles East of L'Aberwrac'h.

not with 2m draught & a lead fin @ anchor ( Bruce ;)) :D

we have only ever managed Cherbourg > Texel over the years due to limited time.
swimbo "doesnt do" over nighters these days as she gets confused with lights , so its day sails.
hope to leave from Solent area but nothing cast in stone as its a 2 up family cruise / holiday to explore new places

You should be able to pop across to Alderney from Solent day sail to Jersey or St Malo then work your way along the coast and through Le Four then the Raz after that enjoy yourself in a warm easy environment. The Morbihan (sp) is not to be missed you should be able to get to La Rochelle in 8 weeks then gradually work your way back. Camaret to Scillies or Falmouth 18ish hours so that may be the sticking point for SWMBO, shortest crossing points are CI to South coast so you may have to back track along the North coast.:D

Enjoy it and your retirement.
