Does anybody know if theres a marine wax or polish available which when applied to the boat stays a different colour, for example pink, to make it easier to see in bright light on white boats?

If you wanted a coloured wax you could use Color Magic from Turtle wax, if they still make it. Designed for cars so it disguises scratch marks, and made in a wide variety of colours.

Alternatively, I don't see what the problem is using white / brown polish in bright sunlight. If you haven't polished it off, that area appears matt. The polished areas are shining and reflective. Or have I misunderstood?

It may help to wear sunglasses, polaroid, to reduce the glare if that's the problem.

I just wish I had a problem of sunshine that's too bright. Chance would be a fine thing!

Yeah it does appear matt but only when you look at it from another angle. While waxing my boat last week I kept having to take a step back to see if i'd missed bits, which most of the time I had. Just thought it would make it easier if the wax hazed to a different colour.
