Stern to with an anchor: get lines to quay on to cleats, the take up tension on the anchor winch. If the angle to the quay is not right first time, then adjust using a second line to the winch, but always use the cleats for the actual mooring lines.

Stern to with lazy line: get upwind stern line on to cleat, get lazy line on to bow, get downwind line on. If required, slacken stern lines, take in lazy line then use motor to make slack in stern lines for final adjustment.

In both cases, springs will be used if space permits and there's a significant crosswind.

We go stern too as getting the dog off the bow isn't possible, and YES I use the main winches to pull us back against the lazy line on the bow and then transfer the ropes to the Sampson posts ...WHY .....well because if it blows up all I need do is loosen both the stern lines and we pull away from the concrete wall or jetty using the tension created in the lazy line, Ive watched others running engines late at night in a vain attempt to keep their pretty little sugar scoops off the concrete.

We also go stern too whenever possible AND I have been one of those using the engine at 0400 to keep the stern off!!! Lessons learnt (and now have >2m passerelle). Incidentally, despite being able to control the distance from the quay easier when anchoring, in our case, it does depend on the person on the bows snubbing it off in time - I think that the whole of Fiskardo heard me as I fended off the quay with my feet except one person looking at the lovely fishies...
