How do you cook a mullet?

Was looking over my new berth in Deganwy last week when I notice 3 or 4 fairly large fish (30 inches) swimming around on the surface of the Marina. (low tide) On a closer look these were clearly animals from the Shark family. One of the builders said they were Tope but I have never seen Tope this close in before. I guess they may be Dogfish. Any ideas ? Cetainly don't think they are edible.

Wibbling around on our mooring up at Northney end of Chi harbour, we often see mullet skimming the surface. A swan ghosted past the other day, minding its own business. A mullet had been frolicking around the boat for a while. The swan slows, then stops right next to the boat, obviously fascinated by some movement in the metre-deep muddy water. He cocks his head to one side, then lowers his eye to the water. Bit more. Bit more. Suddenly, something leaps at his face and scares the living daylights out of the poor bird, which starts flapping wildly and trying to escape backwards. Not the most graceful manoeuvre I've seen a swan make. Large fish swims serenely away. I assumed it was a mullet. Bizarre...
