There is a large coolbox / fridge on the boat.

As I do not have shorepower it is really a coolbox. The cooling system is only on when on board overnight.

I keep the door closed. There is also a drain in the bottom but no plug for it.

My point is that it gets very mouldy.

Assistance and advice gratefully received.

Wipe out with a very dilute mould remover and leave the door open a touch when not in use.

I presume you have a top opening box.
When in use drain should be blocked, cold sinks through it with alarming speed.
When boat left, top should be left off and drain plug removed.
Wash round with Milton or similar should kill of mould and ventilation should prevent recurrence.
Thinking about it similar strategy should work for front opening box but I don't have hands on experience of them.
It is also useful to have a container under the drain which can be emptied and cleaned to stop nasties going into bilge.
