Faster then hull speed with a monohull cruiser?

My old Snapdragon 24 had a hull speed of 6 knots, but with 28hp under the bonnet she could manage a bit over 7knots, but with a seriously antisocial wake. Our GPS speed record was 11.5 knots coming in through Hurst narrows with the spring tide pushing us, but our speed through the water was more like 5 knots.

I always said that if I got her on the plane I was going to bale out!

How easy is it to go faster then hull speed with your cruiser?
At what point of sail, which boat, with what sails/rig, what wind speed? Can you do that normally or just on exceptional circumstances?

Easy if you have a boat that is not too heavy like a steel yacht. All you do is head down swell, just like they did in the last part of the film, Perfect Storm. Alas if things get a tad too exciting as regards excessive boat speed resulting in the rudder or rudders lifting out of the water as you surf off the face of a 90 ft wave whilst crossing the Flemish Cap, you do need to know how to slow down or the boat will round up and roll over, or even pitch pole. That might ruin your whole day. The trick is a long trailing warp held down by a good section of heavy chain.
