I'm making up a mooring bridle, I know how to do the eye splices on the ends but have never done one in the middle of rope, can't seem to find a howto on YouTube, unless someone on here knows different?

I’d suggest two separate lines for each side of the bridle: if one fails there’s a good chance your boat will still be there and a lot simpler! Personally I use one with metal eyes and simply shackle them to the mooring.
I just Cow hitch the central point of the mooring line straight onto the top ring on the mooring buoy.I'm making up a mooring bridle
Or sew before seizing.As Refueler says above - it's called a seizing - you can also use figure of 8 turns of your codline to create a racking seizing - even more secure.
