…...for waterproof crimp joints? How much heat do they need? Are the gas ones OK or do I need a 2kw electric monster?

I have an older bosch one. Electric monster. Get one that can stand on its end (heat up). Some have three settings which is useful.

Most heatshrink does not need lots of heat.

Onboard a gass one might work well... and easier than one you need to plug into shore power (and cable length might be an issue).
 
I bought a 2000W heat gun from Wickes. (£23-00) I found it useful initially for stripping 12 table tops at our sailing club & other jobs as well. It stands on end, has 4 heat settings & will do the OP's task easily enough.
It seems to me that if buying one in the first instance it could be worth getting a model that does a variety of other jobs as well.
I.e. freeing stuck shafts & bolts & freeing hoses on the engines are typical tasks I have used it for- as well as heat shrinking to electrical & rope parts
 
I’ve got a Drexel gas gun that does heat shrink and acts as a soldering iron. Works well
Dremel??

I have a Dremel butane gun, much smaller than a heat gun, which has different attachments
- hot knife for rope cutting
- soldering iron
- indirect heat thingy that reflects the heat backwards away from the flame for heatshrink

Well spotted! I would like to say it was deliberate to check if the post was read properly! Just bloody autocorrect with poor proof reading. Yes it was the Dremel one that includes the hot knife. Very useful for foreshore rope work.
