I still remember our first visit to Greece about 40+ years ago and they were trying to do chips at that time. I think the process must havve been:
1) Slice potatoes thinly
2) Drop into cold or lukewarm olive oil and slowly warm
3) Remove from heat? when translucent
4) Leave to cool whilst gently warming the main dish
5) Remove plate from fridge to hold main dish and chips (see through and dripping with oil)

At least that's what it seemed at that time.

Things have certainly changed hugely now. :D

Vyv, Calamari is another one the Greeks do so well! Small Tavern just outside Kalamata marina called Nikis..
There is also the best ice cream shop i have ever had the pleasure to visit at Kalamata town high street, it is just down the street from the commercial dock, they have a choice of toppings lined up, you pick what you want and the ice cream cornet is dipped into it!, 2 euro for a large ice cream, we shall return in May, sheer heaven:p

We have cruised half the year for the past 10 in Greece and eat calamari on average once a week. The Spanish meal sticks out in the mind not only because it was perfectly cooked but because it came as a meal, with peas, onions and mushrooms. Most unusual in Greece, where the fish on its own is the standard offering.
