As it's a water heater I recon it'd be pretty good for making hot water, much better than a fridge....

Very much depends on the boat but if the boat has a water supply it's an inefficient way of doing it. I'd say only suitable for something like a swimplatform shower on a wakeboat or similar where there are no existing water based facilities.

If you read the opening specs it says "up to 6ltr per minute". That sounds a lot , but that will be at its coolest setting because to heat water on demand and be hot the water has to be in the unit for an exact length of time for the set temp. To get any decent heat you'll probably be down to 3ltr per minute which I could wee better than!
Just use your kettle and wash at the basin!

We get you have no way of heating water currently. That much is obvious. But does your boat currently have the ability to carry water with plumbing inbuilt? Is your engine directly raw water cooled or fresh through a heat exchange? Each of these will give you options from calorifier to 12V water heater for a neater solution using available power before having to tack on a makeshift camping unit on additional external power at roughly the same price. i.e. circa 400 quid.

It has a 100l cold water tank. The engine is cooled directly from the sea. So no heat exchanger. There are routes I could run a pipe down to the shower. It has a mixer tap but only 1 side is connected.

have a look at these:

electric only:
starting at 6 litres they can go to 40l plus. Either heat dockside and use on the water or run off alternator only

Electric heat exchanger:

At large volumes 20 litre plus a conventional calorifier just set up for 240V dockside / home electrics will do as well. Remember they will keep hot water for showering for up to 48 hours

buy a diesel water heater, either Wabasto Eber. or a Chinese one and upgrade with better exhaust etc. Plenty here use them without issue.
i bought a refurbished Wabasto off fleabay and will be heating 4 mall radiators and have a 30ltr calorifier with a 240v immersion heater inside for 240v dock hook up.
