Surprised no one has mentioned Sailing Seabird Sailing Seabird I have watched from the start when they bought an abandoned boat that had been ashore for over 15 years for €1 yes €1, they have worked and worked almost every day on that boat just the two of them and at least they are honest if they don't know they ask and unlike some stations they listen to advice

A few of my favourites:

Tarbert Sailing
Tupaia (mentioned above but incorrect spelling)
Spearax
Toby goes sailing
The Boat Cheat
Jo and Tim
LifeFourPointZero
The Bumbling Sailor
Sailing Madness

These guys popped up a few weeks ago 'Thehomeimprovmentschanneluk' not what I would normally watch but the two guys are so engaging I got sucked in. Basically they bought an old canal Boat and they are refurbishing it nuts and bolts. They have no clue about boats but they are doing a great job so far. I think the finished product will be raffled for charity.
Sorry but unable to post the link

This is an old site but a bit of a hidden gem if you never saw it.
Young lad going round uk in a corribee Nathan was I believe a member here at the time?

If your in scotland, sailing free spirit has excellent cinematography and commentary,
They spent a year on the west coast and overwintered in stornoway and are now exploring norway.

More excellent cinematography and interesting storyline with yacht teleport, young couple buy an old boat and sail it round the northwest passage. They are both photographers so the imagery is beautiful.

All the above is really good viewing. Quite like to add Erik the crazy Norwegian too. Goodness what a fearless fellow, most inspiring.

I enjoyed the several series of 'Intrepid Bear'. They came across as likeable, authentic cruisers willing to show the downsides of long-term cruising without creating drama just to chase ratings and gain sponsorship.
We got to know them when we were in the same marina in Portugal a few years ago. Definitely very down to earth and... well just ordinary people really. I believe they've sold the Najad, not sure what they're up to now.

May I suggest "keepturningleft"..

then..
Although not a channel as such, for very different sailing look up "The 3 Rivers Race"

to combine the 2

I find this young bloke genuine and he usually has something entertaining to watch:

Check out his early stuff as well - good for him.

IOW to France is a lousy passage anyway and I would not touch that forecast with a barge pole - racing eh?

.

I wasn’t going to add to the growing list but this story is well worth watching.
Spear It Animal - I’m not too interested in their early stuff but they recently bought a hurricane damaged catamaran, actually it was upside down in mangroves in the Caribbean. The story of them getting it out is really compelling, and well worth a watch.
Start with this episode
before the cat rescue story, it’s mainly girls is bikinis…

Im not sure i’d agree with that. There are plenty of bikinis but they are in hot places. Their ability to spin a story is incredible and i think sets them apart. Id argue they may be the first ā€œprofessionalā€ boating youtubers in terms of their approach from day one. They also have the enthusiasm of youth on their side which is compelling. When editing mine i often wish the people on camera were less old and moany 🤣 and if those old moany people could think of a story to tell it would be nice!
