Fancied a bit of bread making in the past, and its been OK, but not great, the one thing we never get quite right is nam bread.... Anyone getting that bang on?

Do you mean naan bread?
If Naan this is my recipe that works well
150ml milk-hand hot
2tsp castor sugar
2tsp dried yeast
450g plain flour
1tsp baking powder
1/2tsp salt
2tbsp veg oil
150ml yoghurt
1 large egg beaten

sift flour with baking powder and salt into bowl
Add yeast, oil, yoghurt and egg. Mix to dough.
Knead for 10 mins
Oil bowl, roll dough, cover and leave till doubled in size.
Pre-heat baking tray in very hot oven, pre heat grill or fying pan if no grill.
Knock down and knead again.
Divide into 6 balls,shape each one into naan 10" x 5".
Bake in oven for 4 minutes. The naan will puff up. Remove from oven and grill for 30 seconds until top browns.

You can brush top with melted butter and add onion seeds etc before grilling if required.
