Can someone tell me which is the correct way that the olives should go on ? (I know the bottom one isn’t seated correctly) both ways seem to leak !

While I don't know for certain, I'm reasonably sure the top one is correct. That would give a relatively large tapered sealing face going into the fitting, and a shoulder for the nut which holds it in place to sit against.
Thankyou ! It’s definitely the logical option. Can’t figure out why it leaks, I received the fitting unused but maybe the olives got mixed up.
 
if it's anything like the trim tabs ones i have, take care you're not fitting imperial measured olives in mm speced plastic pipe (or the other way round) measure with calipers EXACTLY the OD of the plastic pipe and get the right olives that will fit.
Having said that, pipe seems well used and not smooth at all. Maybe cut further in (if you can that is!) and try again on a clean/undamaged part of the pipework?
