For those who don't have the time to watch the whole vid, are they proposing angle grinding a bit of keel off?

Lop off 68% of your keel.

Not sure I'd be ready to do that - I can think of plenty of times I'd want stability when putting those wings down wouldn't be a good idea. I could see it working on a new design, but as an addition to a cruising boat, not so sure. As for out and out racers, I seem to recall seeing similar arrangements already.

The kit also makes the beam more, possibly by a foot at deck level. Will make rafting interesting in mooring hotspots.

It would make coming alongside in a blow interesting as well. Not to mention potentially expensive

It's a bit vague on the matter. ? However that would be inconvenient and you might need the bit you cut off, so I think they are claiming it reduces displacement as you streak along

Fantastic - victory will be mine in the next jester challenge. Chop the bilge keels off a Junk Rig Kingfisher 20, stick these bad boys on and the junk rig will be foiling all the way to the Azores!

Can't see any possible downsides

Over complicated. Whats's wrong with a pair of nice old-fashioned leeboards ??? ;)
Because the horizontal bits are hydrofoils perhaps?

Its a variation on / alternative to the horizontal sliding foil to provide lift to leeward which has been around for some time, or the foils on Open 60s etc.

Big drawback (as well as berthing) is the idea that can have a keel 70% lighter and 70% shallower. The Angle of Vanishing Stability (AVS) curve will be a bit interesting - aka the boat is unlikely to self right after a knockdown.
And the issue with foil assisted stability is that it relies on going at speed, and doesn’t help when slow or stationary. Hence if get caught by a sudden gust when going slowly, or get caught aback in a wind change, the foil won’t help and the lack of keel depth and weight would be scary.

With both ‘sleds’ deployed, why, you could slither on and off a drying mooring in the UK or park on a sunny beach?

Doug where on earth did you find that? It is indeed intriguing , if radically different ?
Someone has spent a lot of engineering time getting that going
