I replaced the cable steering on my Fairline Phantom 32ft a few years ago with hydraulic steering equipment sourced from Vetus. It was a lot easier than I expected, as long as you keep everything scrupulously clean, Even making up your own hydraulic pipe fittings is fairly easy, and so is a dual steering position. The beauty of it is you can fit an auto-pilot hydraulic motor directly into the system. I struggled for years trying to turn the boat with the cable system, and found it so much lighter with a hydraulic system, but there was still plenty of feed-back from it.
Vetus in Southampton were very helpful - they knew everything I would need, all I had to do was measure the length of piping required, and give them details of the weight of the boat etc. There was always someone on the phone ready to give me advice when I needed it.
You could also add on a power assisted pump, but I found I didn't need it - altogether I was very pleased by how it turned out and would recommend you give it a go. PM me if you need to know any more.....
