Would it be ok if I attach anchor with 2 metres chain and rope With a stainless steel snap hook. Will use a heavy duty one.

Not advised. Better a decent shackle that is moused to prevent the pin turning and undoing.

really depends on the spec, configuration and provenance of the snap hook.
A 2m chain sounds like as if it's for a dinghy, and decent, snap hook or locking carabiner, is not an impossibility. It will make quick changeover and preparation easy.
