The hose going to the sea water pump on my Volvo penta 5.7 engine has sprung a leak and is constantly dripping. Can I just take it off and replace it whilst the boat is afloat

If it’s a sterndrive, then water will be coming in.
It will all be a lot drier if you change it out of the water.

Is it the hose/jubilee clip thats weeping or...... water dripping from raw water pump shaft rear seal ?
Nipping up clip should stop leak or if sufficient length simply cut off top 50mm of hose and re attach.

Dripping only when engine running, or dripping all the time? If all the time then the hose is below the water line and you'll flood the boat if you remove the hose while afloat.

"Bloooop" ... the sound a boat makes as it sinks because you've removed the seawater inlet hose without some sort of plug or seacock to stop the water coming in.

if the hose is leaking is it just a matter of perhaps moving the clip, or perhaps slipping on a second clip to stop the dribble but you may have to do that with water coming in, once off if you can raise the hose tail above the water line it may give you some thinking time!!!
