I can offer rigging genny sheets straight from clew to winch, neglecting to go through the fairleads.
Forgetting to tie off a spinnaker recovery line before hoisting the kite, then sailing along with 60 feet of bright orange polyprop lashing away downwind.
Forgetting to open the cooling water seacock. Fortunately, the engine overheat alarm reminds me on this one.

A few weeks ago I took my eberspacher back to the boat to re-install it. When I got there I realised I had forgotten my tool box.
The next week I did exactly the same thing.
The following week I REMEMBERED the tool box. Forgot the heater......
The week after that I forgot to go to the boat.

Carefully coming in to harbour on a leading line of a white rock in line with a gable end, when the white rock (aka a sheep) got up and walked away.
Fortunately it had been sleeping in front of the genuine white rock!

pre GPS channel crossing, about an hour before expecting to see St Catherine's on the port bow:
lookout: "Are those cliffs off the starboard bow?"
helm: "No they're clouds"
a few moments later:
"Aren't those trees growing along the top of the clouds?"
"Well it looks like we'll be gybing in a few minutes"

Oh, and I forgot. Servicing a bilge pump then reinstalling it arseyversey, so it blew, not sucked. Took me weeks to work out why the bilges seemed unusually dry that season.
