IIRC the difference between beating and running is just 4 degrees.An even more extreme case being the America’s Cup foiling craft where the sails are never to be seen sheeted other than pretty close in.

Something like that, yes. Our apparent wind rarely goes beyond 90 degrees, theirs rarely past 35. But at 40kn, it wouldn’t. Similar with other big foiling craft, maxi tris etc. but none of that is really relevant for ordinary sailors.
