There is not a lot to choose between them so far as sailing performance is concerned. The Fulmar, having a fractional rig, is perhaps more tuneable and has a smaller spinnaker. Genoa sheet loads are a little lower. The Sadler has a masthead rig and therefore bigger genoa and spinnaker, with correspondingly higher sheet loads. Performance is about as you would expect, Sadler slightly quicker but not a lot in it.

Both excellent sailing boats and also my final choices six years ago. I went with the Sadler and don't regret my choice at all. The internal insulation is a tremendous bonus.

I also went through the same process as you recently and bought a Fulmar. I went for this boat rather than the sadler as I heard that mid 80 's sadlers may be prone to some osmosis problems. There are not many late sadlers for sale.
The traditional layout of the fulmar suited me and it has tons of storage plus great accomodation.
The sadler although double skinned is said to be unsinkable which is of course a real benifit. The problem is with flexing of the hull from a minor impact the inner core can break down at this point leading to more flexing. It not unknown to have similar problems at deck level giving squeaky areas as the dech flexes slightly.
Both boats sail well. I have only sailed my fulmar a few months, but have hade no problems. Only crit. is perhaps the engines could have more horses ?
