I have ordered and received several but they seem of poor quality and/or will not accept the recommended cable size.

What types have you tried and what is the cable spec (eg two single wires, one two- core, diameter)?

Two separate cores, outer Ø4mm, inner Ø2.5mm. Those I have received are nameless. I need to be able to remove the panels under some circumstances as they are rail mounted. Connectoes with "disconnected" covers would be good.

The standard MC4 connectors and wires are designed for this, IP67 rated and widely available for cheap. You can get IP68 cover caps too. I've got mine from Newfrog but there's a myriad of sellers for these. You'll need crimpers and the plastic assembly tool offered with them.
The matching cable is 4mm² double sheathed, outdoor grade PV cable, also widely available for cheap if you buy a 50/100m reel (apart from the double sheathing being a bit annoying to work with, this is by the way by far the cheapest option to aquire tinned 4mm² cable). All found at a Chinese supplier of your choosing, eBay, or with significant markups a PV supplier or marine electronics shop.
