Any fool can cook long grain rice

It is in cooking a good rice pudding where the skill lies.

White rice, boiled in a bag or boiled in a saucepan, what's the difference?
You need to boil about twice the volume of water as you cannot use the absorption method with BitB. Plus, I prefer to decide how much rice I wish to cook. Plus, Uncle Ben's directs to boil uncovered for 10-12 minutes. WTF? Boat full of steam and empty gas bottle. Heaven!

My wife is Singaporean so we eat a lot of rice. We always buy Thai Jasmin Fragrant rice, 10kg bags from Manchester China Town.

We use rice cookers, decent ones bought in SE Asia not the £20 ones from Tesco.

I once watched Ken Hom on a cooking program and he said that it’s no longer necessary to wash rice. I passed this on to my wife and she replied “my grandmother told me to wash it”. In the interests of marital harmony, I’ve learned never to argue with grandmother guru.

We use “easy cook” rice, also know in Greece as “parboiled rice”. The grains are slightly yellower than normal rice. No idea how it’s been treated but you don’t need to rinse either before or after cooking, just sling in pan, cover with water plus the thumb nail mentioned above and cook until tender. Drain if needed, job done.
