Off St Davids. Looking at the track she's been wandering around a bit, direction wise.

She has been in exactly the same place for 3h 37m and it's given as "self-reported". The link to "Self-reported" 404s, but the page at http://www.marinetraffic.com/de/p/report-your-own-position suggests that it's when you contact them and say where you are, rather than anyone picking up an AIS signal. There seems to be an Android apps for that, so perhaps the single position of St David's Head just means she got a mobile signal for a bit.

How does the site know the destination of a pleasure craft?

At a guess one would assume that the site gets data from the vessel's systems automatically or it is manually entered by the vessel's navigator. I don't really know.

I've set her in 'My Fleet' on Marinetraffic.com, and have just received an email to say she's arrived in Falmouth. I'll be there myself tomorrow, so might check her out.
