I had a 3kw genset that used LPG. Worked fine, it was a B&S engine with a gas conversion. Since I needed to cart it around, the 13kg bottle was a pain. At the time, gas was cheaper alternative to petrol (not UK) as it was kept low for cooking.

For an outboard, the hassle of the fuel would outway a bit of carb cleaning. My Yam 3.5 2T is happy on last years fuel and starts 2nd pull after 6 months in the shed.

You need a pressure regulator and a vapouriser annular ring. You can use the existing throttle butterfly in the carb, but it gets a bit OTT. A simple throttle butterfly from a fork lift motor works.
However the outboards are such low power that you may find getting a low flow a problem. Plus, most car engine installations rely on cooling water (hot water actually) passing through the regulator to prevent icing. Starting from cold can be awkward. Many road conversions use petrol to start and switch to lpg when warm. Our cars tend not to do that and we fuel them from simple camping cylinders rather than complex tanks with gauges and stuff. However many lpg cars need cranking a bit for their first start.

On balance, too much bother and a dicier fuel to handle on a boat than petrol. Doesn't matter on our cars which operate in the open air without bilges and such.

Saw one demonstrated in a tank at the Toronto Boat Show a year or two ago. One of the selling points was no problems when you come to start it after its been left standing for a winter. It was a small outboard, about 5HP and they were talking about extending the range. However, they were not at the show the following year. Would not say who the outboard manufacturer was, just 'an import'.
