Well, I'm not sure how we all managed before we had roller furling but I seem to recall that's how sailing was done until just 30 years ago...
But then we knew what we were doing, often practicing a number of times a day in blustery conditions; most had a preferred systems for sail changes. Mine was heave to, ease sheet a little, let go halyard and sail drops over foredeck. With twin headstays the next sail was already hanked on so switch halyard and hoist. Trim new sail then stow dropped sail along rail, or change it depending on what was anticipated for the next change.
