I would say don't mix the fittings as a small misalinement can result in an air gap between the inside of the olive and the pipe.
and use soft copper olives on gas pipe not brass olives that come in standard plumbing fittings.
 
"annealing"

the small bore copper that comes in coils is annealed thats how it can be coiled.
the straight lenghts are drawn and are hard copper.
no need to anneal when proper fittings are used but you will have anneal copper if you want to make a washer for a banjo coupling or a sump plug etc.
 
I understood that 8mm and 5/16" compression were close enough to be interchangeable... but 10mm and 3/8" are definitely not.

Alde bubble leak detectors seem to come in three sizes (1) 8mm / 5/16" (2) 10mm and (3) 3/8".
