There is a sea food and Champagne bar by the Sunseaker stand, so I bought my lunch and went to the bar,
"A glass of Champagne please"...
"Sorry we only sell bottles"
"A glass of white wine please"
"Sorry we only sell bottles of those too"
As I was on my own and driving I had to eat my lunch dry without a drink.
Lucky you were not at the Goodwood Revival. In Friday's heat my companion and I became a wee bit thirsty and just found ourselves in a bar that sold rum punches .....at £10 each. Near crazy with thirst I dug out a precious twentyand got back two small beakers full of ice with a mere dribble of watery rum. No threat to drink/drive at all!
PSS - 10 quid for a pummy runch is daylight robbery certainly - here a stiff punch with a double measure of rum is about GBP 2.50 - 3.00 generally.

Its simple really. If you go to such events you know your going to get ripped off for food.
Just as they know, they are ripping you off. Captive audience.
I don't think they are ripping you off, they are providing a service for which they are being charged at an extortionate rate, I presume.
An example, Silverstone for the Moto GP was £2k for the weekend. That's a lot of money to recoup from coffee, tea and sandwiches before you get into profit.
It's even simpler. Every year this comes up as though folk are surprised. Its simple really. If you go to such events you know your going to get ripped off for food.

And if you take a sandwich or 2 and a bottle of water, then you can more easily justify a pint of draught Guinness (which is still cheaper at SIBS than in a pub here).
