Re-read the post again. Yes, we do have a dirty bottom. Never thought that would figure in these problems. Learn every day I guess.
I did have an earlier post on rigging. But if I recall that was about rigging the mainsail sheet. Got that solved. I will go back over the threads to see what I have said in the past. The older I get the worse my memory.
 
I think that, as others have said, you will find that gathering speed by falling off before the tack and then holding on to the tack until the bow is through the wind will be a huge help.
 
Holding on to the tack I expect means holding the jib cleated on the original tack which means that as the boat reaches head to wind it will be pressed aback (inside out). This inclined plane to the wind will force the bow to cotinue turning even when the boat has stopped and so rudder has no turning power. It is a very efective steering tool when there is no way.
Yes the boat will be very sluggish with dirty bottom. You may not be aware of just how bad it is.
I operate in warmer water than UK and would never race without a loving in water wipe over of the bottom with a rag. olewill
