Cheese does not mature after freezing. If you freeze unripe camembert you eat chalk. Once it has matured to your liking its OK - after freezing and tawing - in my experience. You can doe the same thing with air dried ham Serrano etc.
Its easy enought to do a trial batch and check for yourself.

I concur.
We were eating pepper-gbejniet at Christmas time, bought in Malta the previous August.
Just a shame about the bread we had it with.
