Having lost a good anchor owing to failure of a top-of-the-range stainless, bow-roller friendly swivel, I have given up on them. Unless you are going to swing to an anchor for several days, what is the point? And if you are going to swing to an anchor for several days, is it so onerous to lift it enough to untwist the chain, then reset it?
In most cases where I have anchored for several tides I use a long ride which will accomodate many twists anyway. With big tides, a CQR will turn and reset anyway - with or without a swivel.

Many are used on Auto Rope to Chain rodes to stop the rope unlaying and the splice falling out. It's not un-common but usually the realms of deeper anchoring which doesn't seem to happen much there.
Getting anchors up the right way when retrieving.
More compact for going through the micro bow rollers that seem to be taking over.
Good ones are stronger than 98% of shackles being used, miles stronger in many cases.
Many reasons, which may include not having to lift and reset your anchor every couple of days.
