Its a good point, haydn and I suspect we all do much the same. I do draw some lines on a chart before I go and have a quick look at what the tide is going to be doing but I certainly cant be arsed to plot position fixes every 30 mins or whatever. The only thing I do is to keep a regular eye on the distance-to-next waypoint figure so, if all the screens go blank, its easy to plot a rough position from the lines on the chart

I tend to select a handy compass rose on the chart, and put its co-ords into the handheld GPS. Should we lose the nav system, its dead quick & easy to take the bearing and distance from the handheld and draw it up on the chart (especially as you can just use the ruler on the rose for the bearing).
